The base batter for this recipe I know by heart. It is simple and versatile while deliciously healthy. You can play around with the ingredients, such as changing the blueberry to chocolate chips or simply leave the batter alone and serve the muffins with your favorite jam.
• 2 cup all-prupose flour
• 1 cup sugar
• 1 stick butter
• 3 eggs ( yolks and whites separated )
• 1/2 cup milk
• 1 Tsp vanilla extract
• 1 Tbsp baking powder
• 1 cup blueberry
1.Preheat the oven at 350°F. Line a muffin pan with cupcake liners. Beat egg whites at medium speed with an electric mixer until foamy. Set it aside. In a medium bowl, mix butter and sugar at medium speed until it is fluffy, then add yolks one by one. Whisk milk and vanilla extract. Add it to the butter mixture until homogeneous. Slowly mix flour and baking powder. Gently mix the egg whites and blueberries.
2.Fill up 2/3 of the cupcake lines with batter.
3.Bake in the preheated oven for 18-20 minutes, and enjoy a delicious, savory blueberry muffin.
